The Mighty Green Bean: Brown Rice with Vegetables Recipe

Vegetable Rice:
Makes 4 Servings –  Serving Size: ½ cup

  • 2 tablespoon Extra Virgin Olive Oil
  • ½ cup Sweet Onion - small diced
  • 1 tablespoon Fresh Garlic - fine chopped
  • ½ cup Red Pepper - small diced
  • ½ cup Yellow Pepper - small diced
  • ½ cup Zucchini - small diced
  • 1 cup Blanched Greens Beans - cross cut to small dice size
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper - coarse ground
  • 1 cup Cooked Brown Rice
  • 1 each Fresh Lemon - zest


In 12” sauté pan add and heat oil, then add onions and sauté until onions become translucent, about 5 minutes. Add garlic and sauté one minute, then add peppers and zucchini and sauté until just tender. Add green beans, salt, pepper and mix well and then add brown rice, lemon zest, mix well again and sauté until thoroughly heated and serve.
