Once a year, several thousand dietitians from across the country gather for the annual meeting of the American Dietetic Association. Dietitians attend this conference to learn, connect and reconnect, network, taste, explore, and also have some fun. Last week, for the first time, San Diego (Healthy Dining’s home-base) played host to this assembly of nutrition professionals. In addition to exhibiting at the conference, Healthy Dining hosted a by-invitation-only evening event at The posh Palm Restaurant in downtown San Diego. The evening began with a welcome from our Founder and President, Anita Jones-Mueller, and Director of Nutrition and Healthy Living for the National Restaurant Association, Joy Dubost. The highlight of the event was when Brian McCardle, The Palm’s corporate executive chef, wowed the standing room only crowd with his cooking demonstration of Grilled Atlantic Salmon Fillet with Toasted Almond and Golden Raisin Couscous Topped with a Cherry Tomato, Cucumber and Mint Salad. This easy- to-prepare and altogether delicious dish was appreciated by all and sure to become an old favorite, thanks to the printed recipe included in the evening’s handouts. After Chef Brian’s demonstration, with wine and sparkling water in hand, the 120 leadership dietitians were then treated to samples of the healthful creations from six Healthy Dining restaurants, including The Palm, McCormick & Schmick’s, Pita Pit, Sizzler, Extreme Pizza, and The Old Spaghetti Factory. Plates were full of everything from spaghetti squash to pizza to salmon to ceviche, conversation was lively and full of laughter, and a tasty time was truly had by all.
