Summer is right around the corner, and with it comes the promise of plenty of back yard barbecues!  The weather is warming up, the flowers are blooming, fresh produce is filling the bins at the grocery store and farmer’s market, and that long-neglected grill is calling you to fire it up and get cooking!  Sure, you can cook the usual burgers, but why not expand your menu and healthy diet this year by throwing some new and maybe even unexpected fruits and vegetables on there, too.  The sky’s the limit when it comes to choices!  Here are a few ways to enhance your barbecue nutrition and flavor this year (and maybe even cut some calories and fat):

1) Try new vegetables – Sure, we love our usual zucchini, asparagus, corn and mushrooms, but why not try eggplant, onions, tomatoes, or even a head of Romaine lettuce to mix it up a little? 

2) Sweeten it up with fruit – If you haven’t tried this sweet barbecued treat yet, you are missing out!  Fresh pineapple, peaches, bananas and more can take on a whole new depth of flavor when grilled.  They can also make for very figure-friendly desserts.

3) Try some new tools – Yes, skewers are a great idea and can make for a beautiful presentation, but if you’d prefer all the flavor without all the work, try a grill basket.  These wonderful inventions can make it easy to grill smaller fruits and veggies or those that you have chopped, sliced and diced.
