Quinoa Salad
Fruits, vegetables and whole grains are cornerstones of the Mediterranean diet.  This salad blends the nutty and protein-packed goodness of quinoa with fresh tomatoes, cucumbers, celery, broccoli, green onion and lemon vinaigrette.  Topped with feta and Kalamata olives then served over a bed of greens with a side of pita bread, this meal makes a good choice for lunch or a lighter dinner.

Greek Chicken Pita and Fresh Fruit Side
This classic Mediterranean choice features grilled chicken, lettuce, tomato, caramelized onions and feta cheese in a whole wheat pita.  The combination of whole grains, veggies and lean protein (especially when paired with the suggested fresh fruit side) makes a complete and healthy meal any day of the week.

Salmon Kabobs
With deep ties to the sea, it’s no surprise that seafood is also a key component of the Mediterranean Diet.  These two salmon kabobs deliver on that tradition with a wealth of flavor.  The meal includes zucchini, hummus, cucumber raita, a side Greek salad and pita bread.  To keep this a dietitian-recommended pick, request no lemon oil on kabobs.  For the side salad, request no feta cheese and Zoës dressing on the side; each tablespoon will add 90 calories, 10 g fat, and 75 mg sodium to your meal.

Tortillas are stuffed with spinach, mozzarella, fresh mushrooms, feta, sun-dried tomatoes, scallions, and dipping salsa for iron, fiber and flavor. Healthy Dining's dietitians recommend fresh fruit as your choice of one side to make this a Healthy Dining choice.
