Makes 4 servings

Ingredients:
  • 1 Tbsp canola oil
  • ¾ cup chopped onion
  • 1 tsp cayenne pepper (or to desired heat level)
  • 1½ cups red bell pepper
  • 1½ cups green bell pepper
  • 3 cups sliced mushroom
  • 12 ounces raw shrimp
  • ½ cup Szechuan sauce
  • 6 cups cooked brown rice
 
Directions:
  1. Pour oil in seasoned wok (or sauté pan) before heating and wipe around.
  2. Heat wok and add onion, bell peppers and mushrooms.
  3. Stir-fry for a few seconds and then add shrimp.
  4. Stir constantly for about 2 minutes, and continue cooking until shrimp turns pink.
  5. Stir in Szechuan sauce and cayenne pepper, stirring constantly until mixture thickens.
  6. Serve with brown rice.
