Makes 2 Servings

Salad Ingredients:

  • 2 cups Brussels sprouts, shredded or very thinly sliced
  • 1 cup carrots, shredded
  • 1 cup fennel,thinly sliced
  • ½ cup bacon (6 slices), cooked and chopped
  • 4 cups green and red seedless California grapes, halved
  • ½ cup green onions, sliced

Dressing Ingredients:

  • 3 Tbsp. balsamic vinegar
  • 2 Tbsp. extra virgin olive oil
  • 1 tsp. minced garlic
  • 1/2 tsp. table salt
  • 1/4 tsp. pepper

Directions:
Toss all salad ingredients together in a large bowl. Whisk together all dressing ingredients in a medium-sized bowl and drizzle over salad. Toss until ingredients are well coated with dressing.
